A Few Thanksgiving Dinner Recipes

Thanksgiving is a time of food. It's a celebration of the Pilgrim's early successes in America, won through hard work to tame the land in what was for them a new world. Every year it's a traditional meal. Pumpkin pie ends a turkey dinner that includes all the extras. Families gather not only to celebrate the historic event, but just to catch up with everyone's lives. Thanksgiving dinner recipes can be quite different, as there are many ways to cook a turkey.

How about this recipe for a delicious appetizer? Move the pumpkin from dessert to the start of the meal as a savory Pumpkin soup. Heat a tablespoon each of oil and butter over medium heat. Add three sliced leeks (only the white) and saute until the leeks are soft. Add 15 ounces of pumpkin puree, a pinch of cloves, one tablespoon of ground cinnamon, one teaspoon of ground ginger, and a pinch of salt. After that's all mixed, add 32 ounces of vegetable broth. Add brown sugar. Use low heat to simmer it for 10 minutes. If desired pour a tsp or so of cream or half and half into the bowl before adding soup and a dash of cinnamon. That soup is a real treat.

A turkey can be fried instead of broiled. It won't get greasy. The oil can't penetrate the skin after the hot oil sears it. Get a big drum and a propane burner, otherwise known as a deep fryer. Check the meat with a meat thermometer and the oil temperature with an oil thermometer. Make sure to fry outside in a clear area. Get that oil hot, up to 350F. It's finished cooking when the breast measures at 170F, which will take about three minutes per pound. Frying a turkey doesn't involve cooking the stuffing inside the bird, but it does include spices directly injected into it.

For some other soup ideas try curried pumpkin apple soup, butternut squash soup, or pumpkin and sausage soup. But there are other good appetizers for the meal. Cheese wrapped asparagus is delicious. This calls for both a sliced cheese and a soft cheese spread. Try slices of swiss with a blue cheese spread. Wrap the asparagus with the slices spread with the soft cheese, then bake until tender. The asparagus prepared this way loses its health appeal. Splurge a little bit. It's okay to eat on Thanksgiving.
